    Anthocyanin

Anthocyanins, also called anthocyans, are water-soluble vacuolar pigments that, depending on their pH, may appear red, purple, blue, or black. In 1835, the German pharmacist Ludwig Clamor Marquart named a chemical compound that gives flowers a blue color, Anthokyan, in his treatise "Die Farben der Blüthen". Food plants rich in anthocyanins include the blueberry, raspberry, black rice, and black soybean, among many others that are red, blue, purple, or black. Some of the colors of autumn leaves are derived from anthocyanins. Anthocyanins belong to a parent class of molecules called flavonoids synthesized via the phenylpropanoid pathway. They can occur in all tissues of higher plants, including leaves, stems, roots, flowers, and fruits. Anthocyanins are derived from anthocyanidins by adding sugars. They are odorless and moderately astringent. Wikipedia

Anthocyanins of rich purple sweet potato reduce oxidative stress markers levels, e.g., thiobarbituric acid-reactive substances, in the liver and kidney and lipid peroxide in plasma. Anthocyanins' antioxidant effect is important to reverse the increase in ROS production endorsed by endothelial cell activation.

Anthocyanins are the coloured compounds largely found in nature, for which evidence indicates that their regular consumption offers several health benefits to human health, mainly due to their ability to reduce free radicals, reactive species, and pro-inflammatory markers. These abilities can counteract oxidative stress levels, avoid the ...

Anthocyanins are pigments belonging to the flavonoid group, which is widely distributed in plants. They are responsible for blue, purple, and red colors in flowers, fruits, and vegetables and protect plants from environmental stresses such as high sunlight irradiance or low nitrogen . Chemically, anthocyanins are produced when anthocyanidins ...

Anthocyanins aren't the only pigment in fruit and vegetables that provides the deep purple-red colour; for example, beetroot contains plant chemicals called betalains, not anthocyanins. Like anthocyanins, betalains have protective antioxidant and anti-inflammatory properties. Also found in the stems of chard and rhubarb, betalains are in the ...
